I know change is gonna come

Just finished my first week of Insanity and surprisingly  I feel pretty good.  I may have pulled a muscle in my weak tummy, but a trip to the doctor will give me a clear answer (hopefully).  The hardest part for me was the fit test.  Geez!!!  I was in pain the next day!  But the more I worked out, the quicker the recovering, especially when it came to my calves and thighs.  I have one more week before I start my (1) month Vegetarian challenge and I am looking forward to that.  Still mixing smoothies, but alternating between smoothies and flax/raisin/almond oatmeal for breakfast.  I expect to see a pretty major changes in my overall appearance by the end of April.  Time and commitment will tell!  Until next time.

The trail we blazed

What a wonderful way to spend a day!  Hiking on the Santiago Trail. It was beautiful and fun and I can’t wait to go back. My sisters, brother and mother, plus all of our kids went on a hike to celebrate one of my niece’s birthday. It was nice to see them “unplug” and just
enjoy nature. And it was especially nice to have them want to explore beyond what we had planned for the day. This is something I will be making a big part of my weekend routine.

Quick thought on my Kale + Peanut Butter = snack!


Upon the suggestion of my sis, I gave this kale/peanut butter snack a try.  It was surprisingly tasty.  I would like to try a peanut butter sauce over raw Kale.  That would be awesome.

Life is fleeting

I am constantly recommitting myself to taking better care of myself.  I’ve been doing this now for years. And as simple as it seems it should be, it’s a struggle.  Some days are better than others and it is getting easier each day. This morning was especially challenging because I did not have much of an appetite, but I know what happens when I skip or miss a meal.  It throws me off just a little. I want to be healthy and live as long a life as possible.  As I’m typing the thoughts streaming from my head, I can’t help but feel a little silly that I have somewhat of an issue (…and I am aware “issue” IS an overly used word!) with food.  I know food is important, I know it keeps us alive, I know it can heal, therefore it should be well considered.  But I want to get to a place where I just prepare my food and get on with it!  I think that will come with making a habit of good food choices on a daily basis.  It will soon be second-hand.   That is the goal.  With the recent passing of Whitney Houston, I am especially recommitted today to sticking with choices that promote my health.  She died too soon. She was sick and the grip addiction had on her was just too tight.  It choked the life out of her.  I can’t even begin to imagine how dark and desperate a place that must have been.  Her death just reminds me that life is fleeting.  Things can not wait until tomorrow.  Life really is uncertain, so with that knowledge I am choosing to do everything in my power to live it better than I have before.  That is my goal for today and everyday moving forward.  Thanks for listening!

Green dinner



I did it!  I had my green smoothie for dinner and I feel great!  I almost ruined the darn thing when I made the mistake of adding celery.  Blech! I had to doctor it up with some mango bits.  Can’t wait to see how I feel in the morning.

Time to flip my routine…just a little bit

I have decided to try something new.  Instead of smoothies in the morning, I’m going to have my smoothies, primarily green ones,  in the evening for dinner and load up on my fresh whole greens and proteins in the morning.  I’d like to see how I feel in the morning and how it may effect my sleep at night.  So this morning I started off with 1 egg over easy, a whole wheat bagel with 2 tbsp cilantro pesto and 1 tbsp  jalapeno jelly.  Hardly what I planned, but I’m just getting started! It was delicious though!

I am currently reading “Why We Get Fat” by Gary Taubes and so far its captured by attention.  There is the exploration of  food choices and the prosperity vs. poverty issue as major factors in weight gain.  I am still in the first chapter, so when I’m done I’ll give my opinion on the book.  Until next time!

The sun is shining and it’s making me smile

What a beautiful California day!!!  The rain is gone, if you could really call what we had rain.  More like a lot of dew!  This morning started off particularly well.  My daughter and I  have been waking up extra early and doing an ab workout.  I lead the warm up, she leads the ab workout.  Today was day 2, and I have to say I am loving it.  I miss working out and it is quite nice to spend this time with my daughter.

Afterwards I enjoyed a green smoothie, well kind of.   I decided to add vanilla almond milk and water and found that with my green smoothie it’s way too sweet!  I like the green veggie taste and the vanilla was disruptive.  I had to force myself to drink the rest of my smoothie.  My palate is used to a certain taste and this was not it.

As for my skin, I am having fewer flares and have no problem knitting now.  My hands were actually starting to ache when my skin would flare up so this is a really great experience. Makes me appreciate my wellness even more.

Oh my tummy!


This delicious monster made me a little ill.  It was one of my colleagues birthday today and we celebrated with some chocolate mousse cake.  I had one slice, actually smaller than the slice seen here.  While it was great eating it, afterwards my head started to ache.

  I think it was too much of everything in this cake!  Needless to say, I did not go back for seconds!  Yay me!  Alright, back to work!

I love beets!

Beets are my new buddy! I absolutely love this veggie.  But I always feel so wasteful when I cut the greens off and throw them out.  So I looked online to see if I could cook them up and I was so happy to find out I could cook them like chard! I’ve already cut and stored them for dinner. But in the meantime, I made my favorite juice blend this morning:  3 carrots, 1 medium beet and 1″ fresh ginger.

This combo always makes my day.  I always feel really good after drinking it.

I did not cook the beet greens for dinner after all, but instead made a delicious chicken soup made up of leeks, potatoes, carrots, celery, thyme, rosemary, parsley, cumin (just a bit), bay leaves, barley, rice and of course, chicken.  The chicken was left over from 2 nights before.  It was great and a relatively quick soup to make.  I did add to my bowl only some cayenne pepper and turmeric to give it a nice curry flavor.  It was so good, I should have taken a pic before ringing the dinner bell.  There is none left!  That’s what I call a successful dinner.

As for my mini goal, I went to the park today and played with the girls.  This might be cheating, but I’m going to count that as 1 workout!  🙂  I still have tomorrow to do a legit workout fit to brag about.

**My Chicken Soup:

1 leek, 4 small potatoes, 2 carrots, 5 celery stalks, a couple of pinches of thyme, rosemary, several shakes of parsley, 2 shakes of cumin, 2 bay leaves, 2 tbsp sea salt and water filled to the about an inch from the rim of my cooking pot.  Bring to a boil and then simmer for 45 minutes.  Add pre-cooked chicken and less than 1/4cup barley and let simmer until chicken starts to come of bone (about 20-30 minutes).  Rice on the side can be added if desired.

Worth mentioning….

I felt it was worth mentioning my lunch choice today.  

I left the house without a packed lunch and I had only 3 dollars on me.  I bought a bunch of kale for $2 and a sweet potato for $1 at the farmer’s market up the street.  Microwaved both (separately), seasoned with paprika and a little kosher salt.  Viola!  lunch!  Okay…back to work!
